Chocolate chip cookies

INGREDIENTS
-350 g all purpose flour.
-225 g unsalted butter.
-215 g light brown sugar.
-150 g white sugar.
-1tablespoon vanilla extract.
-2 eggs.
-225 g nuts.
-400 g milk chocolate and dark chocolate chopped  (I used 200 g each)
-3 g baking soda(3/4 teaspoon).
-1 g salt (1/4 teaspoon). 
INSTRUCTIONS
  1. Beat the butter at room temperature and the white sugar, dark light sugar and vanilla until smooth. 
  2. Add the eggs to your mixture and continue mixing until they incorporate to the mixture.
  3. Use another bowl to mix your dry ingredients: flour, salt and baking soda.
  4. Incorporate your dry ingredients to the batter and mix it. Do not overmix; we don’t want air into the dough. 
  5. Add the nuts and chocolate already chopped using a spatula. 
  6. Divide your dog in 4 portions, shape each quarter into a dough around 23 cm. You can use baking paper or film to store your cookie dough.  
  7. Refrigerate your cookie dough logs into your fridge from 24 hours to a week.
  8. Cut the log into 2 cm width  and place them on your baking sheets with some space between cookies.
  9. Bake your chocolate cookies in your oven, already preheat, at 175Cº. You can place two baking trays switching your baking trays after 5 minutes baking.
  10. The baking time will depend on your oven, it will be around 10-12 minutes.
  11. Let you cookies cool on a wire rack, you will have to wait some minutes before moving your cookies to the rack, they will be very soft just after baking. 
I have to recognize that I am a big fan of David Lebovitz, this recipe is from his book Ready for Dessert, one of the best baking books I ever had and this is one f the best cookie recipes I’ve ever tasted, that’s why I love to bake them.  You can also find many amazing recipes on his blog. 
This cookies are perfect to enjoy with a scoop of ice cream on summer ¿Did I say that I am a big David Lebovitz fan? 
It’s tru that you will bake around 24 cookies, but you can freeze part of your cookie dough for some weeks and bake it on any time if you really think there are too much.
