Buttermilk bread

Notas

INGREDIENTS
-400 g all-purpose flour (or strong flour, 00).
-1 tablespoon white sugar.
-2 tablespoons active dry yeast (around 8-10 g ). If you have fresh yeast you can use 24 g.
-1 pinch baking soda.
-120 g buttermilk (110 g whole milk+10 g lemon juice).
-120 g warm water.
-75 g butter+butter to brush your bread.
-1 teaspoon salt.
INSTRUCTIONS
  1. Grease our bread mold or prepare it with baking paper.
  2. Now it’s the moment to prepare our buttermilk if we didn’t buy it already prepared. We will mix our milk and lemon juice and let it rest for a few minutes.
  3. In a glass with warm water dissolve your active dry yeast (this step won’t be necessary if you use fresh yeast, if that’s the case add the fresh yeast straightaway with the flour).
  4. Sift and mix all the dry ingredients; flour, sugar and salt.
  5. Melt the butter and add it t the dry ingredients while you knead all the ingredients.
  6. Now, we can add the warm water with the dry yeast and still kneading until we have an elastic dough.
  7. Let the dough rest for an hour cover with a wet cloth
  8. Knead gently the dough with your hands for a minute and place it into the  mold.
  9. Once the dough is placed into the mold, let it rest again for around 45 minutes.
  10. Brush the bread with melted butter.
  11. Bake your bread 180º into the oven, that must be preheated for15-20 minutes. The exact time will depend on your oven.
  12. Let it cool in a rack.
For this recipe you can use all-purpose flour without any problem, but if you have strong flour or bread flour (00), your bread will be more fluffy.
