Anise almond biscuits

INGREDIENTS
-320 g strong flour (00 flour or supermarket strong flour).
-100 g almond flour (or ground almonds).
-175 g white sugar.
-2 eggs.
-1/2 cup olive oil (around 100 ml). 
-10 g aniseed (1+1/2 teaspoons). 
-7 g cinnamon (1 tablespoon).
-4 g  baking powder (1 teaspoon, like Royal). 
-1 pizca de sal. 
-1-2 tablespoons anisette.
-1 teaspoon sesame seeds. 
 
INSTRUCTIONS.
  1. Mix all the ingredients until you have a nice dough. If the dough is too sticky you can add 10 g of flour more.
  2. Place the dough into a film or between two oven papers anklet it rest into the fridge for 1 hour.
  3. Use a roll to extend your cooled dough with a little bit of flour on your work surface.  
  4. With a cookie cutter you can shape your biscuits. I used two circular cutters to shape my anise biscuits. You can also extend your pieces like “ring shaped biscuits”.
  5. Place your biscuits on your baking tray and preheat the oven 180º Celsius. 
  6. Bake them around 10-15 minutes, depending on your oven. It’s not necessary to bake them a lot, they will be crunchy once the biscuits cooled. 
  7. Let them cool some minutes before moving your biscuits. 
  8. Traspase them to a rack to let them cool after 10 minutes. 
  9. Dust your biscuits with confectioner’s sugar, or cover them with chocolate if you love intense flavours.
I covered the smaller circles with chocolate and I could say that the flavor is so intense, but really good. But honestly, they are good enough with many spices and don’t need chocolate to be perfect.
Once again, it’s a good idea to freeze them for some weeks and enjoy them just letting the biscuits defrost for half an hour. 
This recipe, as the chocolate, pistachio and cardamom buns one, it’s perfect por spiced flavored lovers. The anise, cinnamon, sesame and orange combination is simply amazing. I have to say too, that the spice quantities are the right ones for the Spanish taste, but if you really love spicy flavors you can increase the spice quantities and let me know how it works.
